This family recipe extracts the flavors of onion and garlic without actually biting into them.
Ingredients
1 16 oz cans of plain tomato sauce (preferably of the San Marzano variety)
Bunch of basil
5 whole cloves of garlic
The entire half of an onion
1/4 cup Extra virgin Olive Oil
Pinch of fresh thyme
1/2 cup of water
1 tsp salt
1.5 Tbsp sugar
Directions
- In a large enough sauce pan, combine the olive oil, garlic, the entire half onion face down and sauté under medium heat for 10 to 15 minutes until translucent. Stir frequently to prevent burning.
- Add basil and cook for a few more minutes. With a slotted spoon remove the onion and garlic being careful not to remove infused oil from the pan.
- Add the can of sauce, salt, sugar, thyme, water and bring to a boil.
- Reduce heat and simmer for about 30 minutes until water has reduced and sauce is slightly thicker. Remember to stir throughout. Add salt to taste. Serve with spaghetti or bucatini, or store in Tupperware and freeze for later use.
